Palermo-style razor clams with chickpeas and broccoli. Bigné, mousse of cooked Branchi, black truffle. Cuttlefish ravioli with potatoes, saffron Sargol.
STARTER
Scallops, mayonnaise from their coral, speck, scampi tartare. Rabbit terrine, Colonnata lard, livers, Marsala reduction.
